Happy Monday! How was your weekend? I spent time with friends, family, and made these baguette snacks twice. Great people & delicious food: weekend success! Technically these tomatoes are oven dried, but you can easily imagine they’d spent a few weeks sunbathing in Italy; they’re that sweet. These would make a great Valentine’s Day appetizer if you’re cooking at home with your love. Here’s what you’ll need:
- Parchment paper or foil
- A bunch of roma tomatoes
- Sea salt & pepper
- Olive oil
- One baguette
- Fresh basil leaves
- Chèvre
1. Preheat your oven to 275 degrees F. Line a baking sheet with parchment paper. Slice your tomatoes in half and place them on your baking sheet.
2. Sprinkle your tomatoes with olive oil & sea salt. Bake in the oven for 3.5+ hours until they look sufficiently dried. Baking time will depend on the size of your tomatoes. They should look crinkly!
3. Take the tomatoes out of the oven when they’re ready. Start slicing your crusty baguette into slices diagonally. Crusty, such a good word.
4. Spread your baguette slices with chèvre. Top with one basil leaf and one sun dried tomato. Arrange on a plate and sprinkle with a final touch of olive oil, sea salt, and pepper. Enjoy!
YUM!!! I will be making these!
Thanks Laura!!! You really should!
This looks delish!
Thanks Brookelyn! They were a good use of winter tomatoes that didn’t really taste too tomato-y before baking.
These look delicious–and very elegant!
Thanks so much Melinda. They’re super easy… fancy looking, but not fancy to make!
These were AMAZING. And, they look even better in these photos! Gorgeous. I may have to whip these up as an appetizer for my Valentine’s Day meal on Thursday!
Thanks Jenni! I think they’d work well with any kind of soft cheese… you should whip a bunch up!
I’m not usually a lover of sun dried tomatoes, but you make these look incredible!
Thanks Kae… I think you would have liked these! Far from the kind you get in a jar at the grocery store.
Gorgeous photos!
Thanks Kira… I get the best light in my driveway!
Simple but looks so fancy! I love how generously you slather the chevre
Pech, thanks so much. It is super simple… and I always go overboard with the goat cheese! I bought the bigger sized log and by the end of the evening, it was gone!
I’m not a tomato guy at all, but these were positively mouth-watering…looking.
Clean up on Aisle Me.
Haha, thanks Geoff. I wonder if these could convert my tomato-disliking brother?
These were amazing! Thanks so much for sharing the recipe. I can’t wait to make them!
Thanks Susannah! Oh gosh… there was so much good food on Saturday. Bee’s spicy chocolate cupcakes? Ammmmazing!
Linnea, these look so good! I never thought to make my own sun dried tomatoes – I’m lazy and just buy them
Thanks Holly! They were pretty delicious. I don’t think I have ever bought sun dried tomatoes before. I had just bought a bunch of plain tomatoes from costco and was looking for a low-maintenance, different sounding food project. Safe travels & happy Valentine’s day to you & Luke!
oh my gosh, it might have been a mistake to come here before bed. Now I’m starving – you make these look amazing Linnea!
